👉ROQUETTE (Arugula), AKA - Eruca sativa.
What makes this vegetable so appealing? Let me tell you why:
🔥VERY RICH IN NITRATES:
Rocket is also a hyper-accumulator of nitrates. Arugula is a cruciferous vegetable, similar to broccoli, cauliflower, and cabbage (Cavaiuolo et al., 2014). Out of all vegetables, arugula contains the highest amount of dietary nitrates — 480mg for 100g.
✅BENEFITS OF NITRATES?
Dietary nitrate confers several cardiovascular beneficial effects on blood pressure, platelets, endothelial function, mitochondrial efficiency and exercise (Ferrante et al., 2014). Think greater muscle pumps, blood flow and even libido.
⌛LASTS LONG IN YOUR FRIDGE:
Rocket has a 14 day storage and shelf-life, a relatively long time respect to the postharvest life of other leafy vegetables (Cavaiuolo et al., 2014).
☘️HIGHER VITAMIN C THAN OTHER GREENS:
Among the Brassicaceae leafy vegetables rocket has the highest content of ascorbic acid (AsA) with amounts of ~110 mg 100 g−1 in the leaves (Cavaiuolo et al., 2014).
Erucin, similar to sulforaphane, is a a new, promising anticancer agent found abundantly in Rocket (Melchini et al., 2010)
